Since the heart tends to be a tougher muscle, it is best braised or slowly cooked for a longer amount of time. Hearts of younger animals tend to be less tough, however, and can be slowly roasted, sautéed, grilled, or pan-fried. Cook to medium rare. Grill skewered chicken hearts and serve with parsley vinaigrette. Hearts can also be ground and added to any ground meat dish.
